I just recently started making my own hoods. I have always run boonies for my hood piece in the past, but switched over to a one piece poncho suit with a hood attached.
A boonie is always a solid choice, and you cannot really go wrong with that option. However, if you go the route with having a hood attached, you can use 550 cord or thick jute string to keep it attached. It will not exactly be easy to remove, but can be done if you end up deciding to go with the boonie. Just will take some time to remove the tied down pieces of cord/jute.
Also, store bought ghillie suits aren't made from the same material. Natural jute is just that. Natural...It breaks down, frays, and fades color, especially if dyed, and really blends with the environment. Store bought suits due to the material aren't as natural looking, and don't act the same way as natural jute. In as simple terms as I can put it, synthetic material just doesn't blend well in nature. Not to mention, many of the times the colors in the store bought suits aren't going to fit what you need for your specific environment.
I see many guys rocking store bought ghillies under the assumption that they are automatically going to blend in. This could not be further from the truth.
Check out actual military sniper ghillie suits. If you notice on some, the amount of jute is actually so small, that almost 90% of the suit is natural vegetation. While it depends on your environment, some suits are better off having very little jute. Meanwhile in other environments, it is actually beneficial to have a greater amount of jute. With this, store bought suits lack the customization opportunties as home made suits. Not only will you blend in better with your own customized one to your environment, but you can tweak it to allow you to be more mobile, and attach vegetation to more easily.
