how would I go about changing the reg G&G m14 ebr stock to somethin like the Magpul PTS CTR stock?

If it can't be done then I might have to buy the STAR m14 ebr w/retractable stock, which isn't as long as the G&G version and it might not have veteran internals.

Also, would it be able to use a m170 spring out of the box?

1/ You would need to find the G&P stock end connector for an EBR Mod1, which is not sold separately.

Alternatively, you could try sourcing and then machining to fit an RS end..... but good luck with that :-/

2/ The Star will most definitely not have 'Veteran' internals, they only come in a G&G weapon

3/ In a G&G yes, but carry a spare piston, in a Star..... its anyones guess but I would wager no, as their internals are normally not renowned as the best :-/
